CultureGetter Madison is the owner of Saiapalee Tüümian, a bakery in Tartu whose journey into the world of baking began while working as a data analyst at Bigbank. A mathematician by training and former data processing specialist, she opened a small bakery in Tartu in 2021 in the midst of the coronavirus pandemic, a bold step that many considered reckless at the time.
"I trained as a mathematician. I worked at Bigbank as a data analyst and simply baked as a hobby," Madison said in the podcast "What's for dinner today?"
Queues out the door
Today the picture is quite different. People queue for Madison's pastries and the business has managed to expand to a second location. Saiapalee Tüümian has become a beloved spot in Tartu for fresh baked goods.
The next big dream is even more ambitious-to make fresh pastries available across Estonia so that residents of other towns and municipalities can also enjoy the culinary experiences of Tartu's bakery.
